Equipped with 4 small fermentation tanks and a fully refrigerated brewing facility, Narai sake will be brewed year round, in small batches, continuously, by one man.
The scent begins with the delightful sweetness reminiscent of konpeito (Japanese sugar candy) and sugar cane, coupled with the herbal notes of sweet basil. Upon swirling, these elements meld together seamlessly. Soon after, a cool and invigorating aroma of polished rice becomes apparent.
Although its aroma suggests sweetness, the taste offers a gentler, subtly milky acidity. This paired with the refined texture of the sake, yields a lighter body than expected. As the flavor journey continues, the richness of soft rice becomes increasingly pronounced.
