A “neo‑nigori” concept that flips expectations: sake is pasteurized, then a carefully strained portion of moromi is added back, creating a silky texture and a gentle, naturally developed spritz from bottle conditioning.

This nigori (cloudy) sake boasts the depth of flavor characteristic of the kimoto brewing method, while minimizing sweetness and avoiding overly strong aromas, allowing you to truly appreciate the deliciousness of the rice.

It's delicious to drink right away, but if you want to experience more effervescence, we recommend storing it in the refrigerator for 3 to 6 months to allow it to mature, resulting in a sharper, more crisp taste.

「山城屋 風芽」は、濁り酒の常識を覆す季節限定の一本です。新酒を生酒として使わず、火入れ直後の酒に丁寧に裏ごしした醪を加えることで、シルキーな口当たりと瓶内二次発酵による爽やかなガス感を実現。生酒のようなフレッシュ感を持ちながら安定感のある味わいに仕上がり、新潟NEO淡麗の辛口生酛を象徴する「さらっとした、甘くない濁り酒」として杯が進みます。開栓後も崩れにくく、熟成でさらにシャープな切れ味へと変化する奥行きを備えています。
