Koshimeijo brewery was first established in 1845 in the city of Nagaoka, Niigata. However, the current brewing facility was developed in 1930 after a merger of 2 local brewing companies.  The small village of Tochio gets heavy snowfall all winter long which makes it an ideal location for slow, controlled, cold temperature brewing.  Yamashiroya is one of three brands produced by Koshimeijo and the only brand available outside of Niigata.  

All Yamashiroya sake are developed exclusively through the Kimoto process.  The theme of the brand is “Wabi-Sabi”, a term describing a Japanese aesthetic which recognizes the beauty in what is not perfect, that which is simple, modest and ruled by nature.  

1845年に新潟県は長岡市で創業した越銘醸。現醸造施設は1930年に地元の二つの醸造会社の合併によって発足されました。栃尾の小さな村は、冬の間は豪雪に見舞われるため酒造りには理想的な場所です。山城屋は、越銘醸が製造する3つのブランドのうちのひとつで、新潟県以外で入手できる唯一のブランドです。
