Ren 煉 refers to the purification that iron undergoes, as it's forged through intense heat. In the same vein, Ren, the first release of the brewing year, aims to headline the Yamashiroya series with a supremely outstanding Kimoto kei-shubo Shinshu Jigakumi.

Test: koshimeijyo

Koshimeijyo Co., Ltd越銘醸株式会社

Yamashiroya is one of three brands produced by Koshimeijo and the only brand available outside of Niigata. All Yamashiroya sake are developed exclusively through the Kimoto process. The theme of the brand is “Wabi-Sabi”, a term describing a Japanese aesthetic which recognizes the beauty in what is not perfect, that which is simple, modest and ruled by nature.
