Tasting Notes
Yamamoto san built a wooden fermentation cask using akita cedar. Moromi fermentation occurs in this cask and consequently it imparts an elegant hint of woody cedar, both on the nose and palate. White flowers, green apples & zesty grapefruit aromas while on the palate, it unravels with stunning elegance with soft, clean and gentle steamed rice, highly polished down to 29%.
Clearly a sake reserved for the sophisticated & discerning connoisseur.
