Tasting Note : 零響 - Reikyo, a term coined by Niizawa-san, Owner & Toji. It conveys the complete absence of distraction & noise in a sake where the purest umami of rice is magnificently showcased. Each rice grain is endearingly polished down to 0.85% of it’s original weight. This highly delicate process is accomplished over a period of 5297 hours and 34 minutes (or 220 days).
With a minuscule release of just 300 bottles, 100 bottles each are allocated for Japan, Asia & Europe/America.
Subliminal Purity, Refinement & Clarity reverberates like a beautiful sonnet across the palate with pitch perfect balance of florality, umami and acidity, cumulating in a state of Reikyo.
