The classic traditional Grace sparkling utilises chardonnay grapes grown at the Misawa Estate Vineyards in Akeno-cho which boasts the longest growing season sunshine hours in Japan. Limited production of 1,000 bottles in total with remuage on pupitres, dégorgement and dosage addition all done by hand.


On the nose, elegant aromas of green apple and fresh green muscat, opened up to ripe white peach, yellow peach and young mangos. Given a 19-month bottle maturation which is longer than non-vintage champagnes, yeasty notes, rich clams miso soup nuances were abundant. On the palate, the attack showed a well-integrated and interwined malic acid at the front and tartaric acid in the middle, resulting in a well-delineated structure which prolonged the finish. On the mid- palate, nicely balanced naturalness and purity of fruit flavours. At the back was delicious acidity of summer tangerines, carrying on to a finish which showed purity, freshness and volume. (Tasting note according to Naohisa Itou)
