As a young brewer he is full of ambition and passion to make delicious sake that will appeal to the modern person who has a diverse palate and subsists on a varied, international diet.
He dedicates time daily to tasting and studying the sake of the most popular brands in attempts to firmly grasp the intricacies of what makes a sake sought after.
