Tasting Notes: Head Brewer Yuichi-san's intent was to brew a sake with lovely spring aromatics with subtle floral scents but with a clean, crisp & dry palate. Junmai Daiginjos with a 40% polishing ratio tend to be much sweeter on the palate but this sake will most definitely appeal to lovers with a preference for drier styles of sake. Elegance & complexity of premium yamadanishiki rice is beautifully showcased from start to finish.
