UNDERWATER is brewed in collaboration with Kaze no Mori, a renowned sake brewery, also based in Nara. Sake yeast, Shikomi-mizu (water designated for sake brewing), and soyashi-miz (water from ancient Bodaimoto brewing) develop distinctive ginjo aromatics.
The is the 6th annual collab & for 2026, a decision was made to prolong fermentation, at slightly lower temperatures. The cooler long-term fermentation worked well to coax out gorgeously elegant ginjo aroams that linger on the finish.
With a touch of alcohol warmth at 11% abv, Underwater finishes dry & on the mid-palate you'll pick up distinct fruity notes—strawberries, apples & nectarines.
