Tasting Notes: Fruit driven bouquet with impactful & layered umami-laden textures. Amazing drinkability despite it being a bold, rich and powerful sake. A very food-friendly sake.

IBI Red Muroka Namagenshu Ginjo ABV 16% | Polishing 60% | 720ml 杉原酒造株式会社, 岐阜

Tasting Notes: IBI Red offers powerful yet elegant ginjo-ka (aromas). To coax & draw out the ripe tropical aromas, a little brewers' alcohol is introduced. Impactful first sip with a clear transparent finish.

IBI White Muroka Namagenshu ABV 16% | Polishing 60% | 720ml 杉原酒造株式会社, 岐阜
Tasting Notes: Shiro (white) Koji offers a gorgeous acidity profile and the brewer recommends pairing this with rich cuts of wagyu, kurobuta pork and luxurious cuts of chuutoro and otoro.

Sugihara Shuzo 杉原酒造

Established in 1892 during the Meiji Era in the town of Ono, Gifu Prefecture, Sugihara Shuzo, the producer of the Ibi brand, is currently one of the smallest breweries in Japan. 4th and 5th generation brewers, the father and son, work side by side to produce their eternally authentic handmade sake. Sugihara Shuzo makes a limited amount of sake showcasing the fine locally created rice grain and fine natural water source. The locality of the brewery suffers cold, mountainous winters which require that the sake is brewed through long slow fermentation, resulting in rich and elegant brews.
