Chardonnay grapes are hand-picked from the vines on the north-facing slopes of the Misawa vineyard, gently pressed, fermentation takes place in used french oak barrels. Wines are matured on lees for 5 years & the resulting intensity and concentration is dazzling, given the yield of under 800 bottle per vintage. Remuage on pupitres, dégorgement and dosage addition all expertly executed by hand.
