Merlot, Cabernet Sauvignon, and Cabernet Franc are grown at the Misawa Vineyard without herbicides or chemical fertilizers and are separated into small lots. They are then fermented separately using both direct pressing and the Saignée methods, followed by maturation in old French oak barrels. This process allows the wine to express both the complexity of the varietal characters and the sense of place.
