Joining him is Mr. Shogo Tamura, a talented winemaker from Shiga Prefecture. After graduating from Yamanashi University's esteemed wine sciences programme and training under Mr. Togawa, Mr. Tamura became the brewery manager at Sun Sun Winery in 2017. He is dedicated to maintaining a winery that values environmental sustainability and active community engagement. Under his leadership, the winery enforces stringent hygiene management practices to ensure high-quality production that honours the region and its community.

戸川さんのチームに加わったのは、滋賀県出身の実力派ワインメーカー、田村彰吾さんです。田村さんは山梨大学でワイン科学を学んだ後、戸川さんのもとで修業し、2017年にはサンサンワイナリーの醸造責任者に就任しました。田村さんは、環境に優しい取り組みや地域社会との積極的な関わりを大切にしており、ワイナリーの運営に力を入れています。彼のリーダーシップの下、サンサンワイナリーでは厳格な衛生管理が行われ、高品質なワインの生産が保たれています。

Sun Sun Winery is proud of its state-of-the-art facilities and rigorous hygiene management protocols. Equipped with Italian-made, long-legged stainless steel fermentation tanks, the winery ensures optimal temperature control during the winemaking process. These tanks are designed for ease of maintenance and cleanliness, fostering a safe and productive working environment.

To further protect their production processes, Sun Sun Winery follows Hazard Analysis and Critical Control Point (HACCP) procedures. The production area is meticulously sectioned into designated clean zones, where strict hygienic protocols and specialized equipment are required for entry. Additionally, an advanced HVAC system operates on an air pressure basis to deter insects, preserving the pristine conditions essential for their bottling facilities.

さらに、生産工程を守るために、サンサンワイナリーでは「HACCP（危害分析重要管理点）」という衛生管理手順を徹底しています。生産エリアは「クリーンゾーン」として分けられており、衛生管理と専門的な設備が整っています。また、高度な空調システムが虫の侵入を防ぎ、瓶詰め作業に必要な清潔な環境を保っています。

Sun Sun Winery's dedication to quality has earned recognition within the competitive wine industry. Noteworthy accolades include Chateau Sun Sun Merlot 2019, awarded Best Domestic Red in Show, Gold Award, and Best Value Award at the Japan Wine Challenge 2022, and Sparkling Demi-Sec Blanc 2017, a Gold winner at the Japan Wine Challenge 2021. The Geographic Indication (GI) system in Nagano Prefecture acknowledges high-quality agricultural products and processed goods. Sun Sun Winery takes pride in producing numerous certified wines that have garnered acclaim and awards, solidifying its esteemed position in the wine community.
