In the winter of 2021, Masayuki Irie, commenced brewing at Suginomori, Japan's smallest & highest altitude Sake Brewery, as its single Toji/Brewer.
6 iterations of micro batches have since been released & we are deeply honoured to have received a small allocation for Singapore. The sakes are now comfortably nestled within our sub-zero temperature controlled cellars.
Each Iteration (a, through to f) offers a unique, yet cohesive expression of Irie-san's collective brewing experience tied in with the terroir of Nagano. Each of the 6 iterations utilise only Rice, Water & Kobo (Yeast) native to Nagano and offer a distinctive palate & tenor.
2 bottles will be delivered commencing 01 April 2022 with the final 2 bottles delivered 01 June 2022.
A virtual Back-Stage Pass via Zoom into the Brewing Operations & opportunity to chat with the Kuramoto & Brewer is included as part of the Subscription.
