Nero translates as Black in Italian - Quiet & yet unassuming, Nero was the first low alcohol Genshu, released to great fanfare within the sake fraternity in 2008.  Back then, it was confounding, that Toji Katsuki san, would have been able to achieve this revolutionary 13% Genshu. The end point for sakes were commonly at between 18 - 22% abv.

Prof Katsuki san, who spent 45 years brewing at Azumaichi subsequently provided technical assistance to brewers across Japan, on the intricacies of low alcohol genshu brewing. 

Using brewery cultivated Yamadanishiki, this sake bridges the elegance of wine with the soul of Ginjo sake.  Timeless appeal, where sake enthusiast continue to seek out Nero, even after close to 2 decades from its initial release.
