Matsuura Shuzo

Matsuura Shuzo has been brewing sake in Yamanaka, a small town known for its hot springs and craftsmen, deep in the mountains of southern Ishikawa since 1772 and is currently operating under the 14th generation of Kuramoto, Fumiaki Matsuura.  

Matsuura Shuzo was instrumental in discovering that the use of bleach in the brewery, required at the time by the health department, resulted in a chemical reaction with Koji and wood, creating a musty odour in the sake requiring heavy filtering to rectify.  Ultimately the filtering stripped the sake of much of its character.  Due to this discovery, thankfully, the rules were changed to no longer require bleach for disinfection in sake breweries.
