Ilaka Sake Atelier

Matsukawa Village, Kitaazumi District, Nagano Prefecture, is a majestic land surrounded by the 3,000m tall mountains of the Northern Alps. Known as "the last village preserving the original Azumino landscape," the area is characterized by its severe cold and large temperature fluctuations. The fertile land, supporting the pure streams and groundwater of the Northern Alps, produces thriving agriculture. The quality of the sake rice produced here is highly regarded nationwide. The region boasts a particularly high proportion of premium-grade rice, and receives contract cultivation requests from sake breweries both within and outside the prefecture.

長野県北安曇郡松川村は、北アルプスの3000メートル級の山々に囲まれた雄大な地。「安曇野の原風景を守る最後の村」と呼ばれ、厳しい寒さと大きな寒暖差が特徴です。古くから農地が集中し、北アルプスの清流や地下水を活用した農業が盛んで、酒米の品質は全国でも高く評価されています。特に一等米比率の高さは際立ち、県内外の酒蔵から契約栽培の依頼が寄せられる地域です

ILAKA Sake Brewery is led by Katsumi Tanaka, who served as master brewer for the renowned sake "Oshinshu" for 30 years. The brewery uses some of the world's softest water for brewing and contract-grown "Hitogokochi" and "Kinmon Nishiki" rice for sake brewing. The brewery has garnered critical acclaim, winning Gold at the IWC competition in their first year. "Ilaka" means the peak of a tiled roof, and as its name suggests, this brewery aims to reach new heights by combining the finest water, rice, and people.

2024年に松川村で新たにスタートした甍酒蔵を率いるのは、銘酒「大信州」で30年杜氏を務めた田中勝巳氏。仕込み水には世界有数の超軟水を、酒米には契約栽培の「ひとごこち」と「金紋錦」を使用。初年度から国際的コンテストIWCで金賞を受賞するなど注目を集めています。甍とは瓦屋根の頂を意味し、その名の通り、最高の水・米・人が結集した新しい頂点を目指す酒蔵です。
