Tasting Notes : Conventionally, 20% of koji (malted rice) is used for a regular sake. For this prototype sake, 85% Koji and 15% kakemai - such brewing propotions are unheard of. It was an encounter with Laksa, Chilli Crabs, Otah and curry chicken which inspired owner/brewer, Inoue san to dream up a sake which would match well with piquant spices commonly found here in Singapore. Gorgeous golden hues, with a captivating acidity profile - this sake is best served chilled or also equally enjoyable on the rocks.
