松の司 純米大吟醸 Azolla 50
Generously round and smooth, an expertly balanced and refined sake. This organic Junmai Daiginjo uses only Yamadanishiki rice grown by contract farmers in healthy chemical-free fields in the rural village of Ryuou in Shiga Prefecture.
TASTE PROFILE:
The Azolla 50 begins with gentle aromas of sweet steamed rice followed by a lush mouthfeel and refined structure. The finish is clean and gentle.
FOOD PAIRING:
The Azolla 50 has a strong presence making it capable of pairing with richer dishes such as a wagyu shabu shabu. It is however also compatible with seasonal sashimi and steamed and roasted fish, showcasing the amino acid richness in each. This is a sake that is modest and gentle, complementing and enhancing the umami in each dish.
The commitment to using no agricultural chemicals or synthetic fertilisers is only made possible through the long hours and painstaking efforts by the contracted rice farmers working with Matsuse Brewery.
Azolla is the name of a water fern that grows in rice fields and lakes. It completely covers the surface of the water, starving other plants of light and keeping weeds under control without the need for chemical agents.
