Chief Brewer, Keizo Ishida, strives to produce sake which reflects calm and tranquility, a modest style without flamboyance, choosing to work with organic components and brewing methods such as Kimoto which mirror the natural beauty of the fields surrounding the brewery. The brewery has a long list of accolades both in awards for their brews and in recognition for their extensive work in sustainable rice cultivation. Most recently, the brewery has created their Origins of Blue Label focussed on terroir, creating a series of sake expressing 7 different plots of rice grown by Matsuse Shuzo in the Ryuou region.
