Tasting Notes

This is a truly unique Yamahai (山廃) sake, with an exceedingly clean umami structure. Moromi fermentation was hosted in a wooden vat made from akita cedar trees which were over 200 years old when it was cut back in 1973.
You'll notice hints of woody pine, subtle nutty notes with great depth.
Experience this best at between 12 - 15 degrees celsius & makes for a divine pairing with red meats.
