Made with the exceptionally high quality Sake Mirai rice, a rice which was developed over18 years of breeding and hybridizing, cultivated by Takagi Shuzo, the brewer of "Jyuyonndai" in Yamagata Prefecture. This sake is made using Kanazawa yeast, which has a mild aroma. As it is an Origarami Nama-shu, a slight secondary fermentation occurs in the bottle, resulting in a refreshing fizz combined with a pleasant balance of flavors. The illustration on the label is the work of Hana Kershner Kumagai, an American brewer and writer, who has spent years researching and living in Yamanaka.
