Tasting Notes :
Made with the exceptionally high quality Sake Mirai rice, a rice which was developed over 18 years of breeding and hybridizing, cultivated by Takagi Shuzo, the brewer of "Jyuyonndai" in Yamagata Prefecture.
This sake is made using Kanazawa yeast, which has a mild aroma.
As it is an Origarami , a slight secondary fermentation occurs in the bottle, resulting in a refreshing fizz combined with a pleasant balance of flavors.
The illustration on the label is the work of Hana Kershner Kumagai, an American brewer and writer, who has spent years researching and living in Yamanaka.
