Tasting Notes: Fruity aromas of lychee and white peach give way to a slight effervescence unique to nama (unpasteurised) sake, a blast of summer freshness.
On the palate there is a contrasting enjoyment of umami and dryness, with a spicy bitter chocolate like finish.
Best enjoyed chilled at 7-10 degrees celcius.
Pairs wonderfully with dishes using butter, cream, and other dairy flavours.

真・地酒宣言 (Shin Jizake Sengen) translates as “The Authentic Local Artisanal Sake”

Inoue san, owner/brewer is bent on using only produce from Tochigi, where the brewery is. Tochigi is an hour north of Tokyo by train.
His aim is to showcase the splendour of Tochigi and where many breweries use rice & yeast cultivated in various parts of Japan, he collaborates with local rice farmers to help improve the quality of their crop.
He is also actively involved with the Tochigi Insittute of Brewing, where they research on new yeast strains and look to improve the quality of sake brewing in the prefecture.
