This is a competition grade sake, where the extraction happens by the sheer force of gravity alone, with only the middle part of the drip collected & matured in 18L Tobin (Glass Jars). This high grade Daiginjo is then bottled without any further filtration or heat pasteurisation, with some very fine lees.
Upon first encounter, a gorgeously sweet aroma reminiscent of ripe apples and pineapples beckons along with a slight effervescence unique to unpasteurised sake.
Expressing just the right balance of ripe fruit aromas, sweetness, acidity, and umami and a slight creamy texture from the snow-like light ori sediment for ultimate drinking pleasure.
Pairs well with prosciutto, botan ebi, seafood carpaccio, grilled squid and also shellfish.
