The Sawahime Daiginjo was judged, at the IWC 2010, the Champion Sake, out of over 400 sakes judged blind. What an outstanding achievement for a small brewery with just 5 employees. The International Wine Challenge has a sake component & is the largest sake competition outside Japan.
Tasting Notes: Head brewer & 7th generation owner Inoue-san’s philosophy is to showcase the produce of Tochigi. Using only local rice & yeast cultivated in Tochigi, this Daiginjo made from 100% hitogokochi yields an elegant mouthfeel with soft, clean acidity that embraces your palate, culminating with a finish of light spice and gentle sweetness.
