Sake Kasu is a paste after the Moromi is strained of the residual rice solids & often resembles a "block".
For IBI 射美 Sakes, the Moromi undergoes an exceedingly gentle press, resulting in a kasu which is luxuriously soft & packed with rich umami-packed peptides.
Given that Sugihara Shuzo which produces IBI has garnered Unicorm status & fame, with its truly micro-batch brewing, there is really very little sake kasu made available each season.
