Sake Sommelier : Ms Seana Adachi Seana Adachi first fell for Sake while working in the San Francisco restaurant scene back in the early 2000’s. Through a cultivated relationship with Sake importers, her passion was sparked and has continued over 2 decades. She was fortunate to be invited for hands-on exploration of the brewing process at several breweries across Japan and has visited a wide range of breweries annually ever since. In 2014, here in Singapore, she helped to organise and attend John Gauntner’s comprehensive Sake Professional Course. Seana is a fluent speaker of Japanese, an ardent home cook and baker, with a special interest in fermentation exploration and has recently completed her very own batch of home brewed Doburoku Ginjo Sake.
