In the winter of 2021, Masayuki Irie, commenced brewing at Suginomori, Japan's smallest & highest altitude Sake Brewery, as its single Toji/Brewer.
Irie-san continues to refine his adaptation to high altitude brewing close to 1000 meters up in the Japanese Alps, with each micro batch released, evolving to new levels of refinement & promise. As you would imagine, stocks from these micro batches are highly constrained, hence each customer is allowed a single-bottle purchase.
Sakamai (Rice) used for Narai Sakes is farmed in Azumino city (Nagano), at a high altitude of 500meters above sea level. Yeast utilised is native to Nagano & the snow-melted water from the Japanese alps cascading down the streams & rivers of Narai-Juku adds to its highly distinctive texture & opulent silky mouthfeel.
Having held key brewing responsibilities at Nabeshima (鍋島) & Sawaya Matsumoto (澤屋まつもと) in the past, Irie-san's assiduous attention to detail is the magical alchemy of passion and soulful brewing.
