Sato-san, Head Toji is pushing the boundaries with this Hybrid sake, with a blend of Sokujo + Yamahai. Complexity, depth of flavour from the Yamahai-moto with clean fresh flavours of the modern Sokujo method. Soft acidity with umami intricately woven into the fresh Ginjo notes.
