Single Vineyard The limited-production flagship white Cuvée Misawa uses only grapes grown with the meticulous attention of Shigekazu Misawa, the owner of Grace. Rigorously selected grapes are grown at Misawa Estate Vineyards at Akeno-cho, which boasts the longest growing season sunshine hours in Japan. We strive for a natural vinification to the greatest extent. As one of the top level Chardonnay in Japan, the wine is bottle-aged for a few years before going on sale. In order to preserve terroir, new oak percentages have been lowered.
The nose gives an impression of closeness with purely ripened fresh lemon, white peach and grapefruit aromas, as well as gentle oak nuances of custard cream, macaroons, caramel, sweet black bean paste. On swirling, apricot with a lively acidity and yellow peach characters emerged, the liveliness blended well with the overall fruit with a hint of concentrated umami from the oak giving overall softness.
On the palate, an impression of a rounded acidity is followed immediately by a fruit character with depth. The acidity spread across to the outer palate, provided an impression of volume that extends to the end. A second acidity towards the inner palate plays in harmony with the fruit characters at the centre as well as the oak nuances at the back. At the mid-palate, the impression of fruit was pure and of high quality; the body associated with the oak displayed an elegant milkiness.
