Episode VI represents the 6th year of this annual collaborative effort by the Date 7 alliance from Miyagi. The challenge that Kenya-san, Head Brewer of Kanbai Shuzo (lead brewery) set for himself was to showcase the brilliance of Sasanishiki rice from Osaki city in Miyagi. Using proprietary Date Seven Kobo (yeast), they unearthed the purity & clarity of Sasanishiki rice milled down to 29%. Gorgeously perfumed aromas of nashi pears and daffodils with strikingly fresh acidity.
